I also looked into remapping, but when in Windows mode, the multimedia keys are all the same key whether used with Fn1 or Fn2 so I'd lose the Function keys to the multimedia keys if I remapped them. What worked for me in the end was to use the VIA app that Keychron recommends to switch the mapping of the Fn keys 1-12 between layer 0 and layer 1 (Mac mode, and Mac mode pressing the fn key).
